Maturation time is a practical guideline, not an FDA requirement. Flavor continues to develop over time and varies with bean size, alcohol, storage conditions and extract strength.
This calculator uses the FDA fold standard (21 CFR 169.175) for bean-to-alcohol ratios: single-fold vanilla extract is defined as 13.35 oz of vanilla beans per US gallon of alcohol. Double fold and triple fold are exactly 2× and 3× that weight. Bean count is approximate. Grade B pod weight varies with length and moisture; use bean weight rather than bean count when formulating extract.
